Nevertheless, he got an invitation from scout Mike Owen to meet him at the Monmouth pro day on March 9, 2016, an opportunity he jumped at since he was yet to hear from any NFL team/scout. After Monmouth players had their pro day, Joe had an impromptu pro day of his own before Owen and other scouts who were still around.
In doing this, little did he know that his offensive coordinator at Wesley, Chip Knapp had spliced tapes of his performance/abilities on the field and sent it to the Green Bay Packers who were impressed with the quality/power and style of his throwing. The Packers scout was as well impressed with what he saw and for that reason, they signed him as an undrafted free agent on May 6, 2016.

Joe then spent the next one year waiting for an opportunity to play as the team had better players like and Brett Hundley.
